Imagine tossing a piece of carrot cake into your blender with some ice cubes and drinking the processed result. Sound yummy? (Yucky..?) Lol!
Carrot cake has always topped my list of favorite desserts. Just one bite of that deliciously sweet cream cheese icing, and I’m in heaven!
But as I’ve gotten older, I’ve learned the importance of healthy eating. Thankfully, I’ve figured out how to make this nutritious snack taste just like decadent carrot cake!
This smoothie combines carrots, cottage cheese (instead of cream cheese), spices, creamy almond milk, and a little vanilla extract.
There’s nothing like waking up your palette first thing in the morning with a blast of flavor. There is sweetness from the honey but also spice from the nutmeg and cinnamon, which I adore. This is also a great way to incorporate veggies into your breakfast, which, let’s be honest, usually is not so enticing.
Give this smoothie a shot if you’re in a breakfast or snack rut. You just haven’t lived until you drink your favorite dessert 😉
FYI – this has no added sugars or sweeteners, however, you can add it to your taste.
