Despite being incredibly busy with work, I still have managed to squeeze in some fun social events like a lunch date and happy hour with friends. I’ve even been playing tennis three nights a week plus Saturday mornings, and let me tell you, it’s been keeping me active!

Salty Sweet Energy Balls
Ingredients
- 1 cup old-fashioned oats
- ⅔ cup coconut flakes toasted
- ⅔ cup roughly chopped almonds roasted and salted
- ½ cup organic almond butter
- ½ cup ground flaxseed
- ⅓ cup honey or agave nectar
- 1 tsp. vanilla extract
- ¼ tsp. sea salt fine
Instructions
- In a medium bowl, stir all of the ingredients together until thoroughly mixed. Cover and let chill in the refrigerator for at least thirty minutes.
- Once chilled, roll the mixture into balls of whatever size you would like. (Mine are usually about 1-inch in diameter).
Notes
- Store in an airtight container and keep refrigerated for up to 1 week.
- Total time does not include the chill time.
